Tortellini In Four Cheese Sauce

  1. Boil tortellini 8 to 10 minutes, stirring frequently until tender.
  2. Meanwhile in deep 12 inch skillet over medium-low heat, melt butter; add cream, ricotta, Mozzarella, Parmesan and pepper.
  3. Cook 3 to 5 minutes, stirring constantly until cheeses are melted and mixture is blended.
  4. Drain tortellini - add to skillet along with parsley.
  5. Stir until well mixed.
  6. Serve immediately, sprinkling with gorgonzola and additional grated Parmesan if desired.
  7. Makes 6
