Donna Hay Coconut Cake
- 9/16 cup softened butter
- 7/8 cup coconut sugar
- 7/8 cup brown sugar
- 1 tablespoon vanilla extract
- 4 eggs
- 5/8 cup milk
- 5/8 cup coconut milk
- 1 cup grated coconut
- 2 1/2 cups wholemeal flour
- 1 tablespoon baking powder
- Preheat the oven to 160 degrees Celsius.
- Grease the baking pan with butter, sprinkle with flour, and set aside.
- Use an electric mixer to mix the butter, sugars, and vanilla extract until smooth.
- Add the eggs, one by one, always whisking.
- Then add normal milk and coconut milk , and grated coconut.
- Sieve the flour with baking powder, and add progressively.
- Bake for about 1 hour, or until a toothpick poked in the center, comes out clean.
- Sprinkle with powdered sugar to serve.
