Grilled Cod With Mango Salsa
- 2 tablespoons cilantro leaves chopped fresh
- 1 lime juiced
- 1 tablespoon olive oil
- 1 clove garlic crushed
- 6 skin-on cod fillets
- 1 mango peeled, stoned, finely chopped
- 2 tablespoons cilantro leaves fresh, roughly chopped
- 1 shallot small, finely sliced
- 2 Bird's eye chilies finely chopped
- 2 teaspoons olive oil
- 1 teaspoon red wine vinegar
- 1/2 teaspoon sugar
- In a small bowl, combine cilantro, lime juice, oil and garlic. Add the fish, turning to coat. Marinate, covered, in the fridge for 20 mins.
- In a small bowl, combine all the salsa ingredients.
- Preheat a grill on high. Cook fish for 3-4 mins each side, until flesh flakes easily when tested with a fork. Serve with the salsa.
