Seafood And Vegetable Paella
- 1 onion chopped
- 2 garlic cloves chopped
- 1 package rice
- 7/8 pound shrimp cooked
- 2 eggs hard boiled and sliced
- 1 7/8 cups rice paella rice, if available
- 4 1/4 cups seafood stock
- 3 1/2 ounces green beans
- 2 carrots diced
- 7/8 cup peas
- 1 red pepper cut in strips
- salt
- turmeric to taste
- Heat a touch of olive oil in a medium saucepan and saute the onion and garlic until the onion is translucent.
- Add the vegetables and saute them lightly.
- Then add the rice and let it brown slightly, stirring it in with the vegetables.
- Add the seafood broth, a pinch of salt, saffron, and turmeric and stir well. Cover and cook over high heat.
- Add the cooked shrimp and another pinch of salt to taste. Bring it to a boil and then lower the heat.
- Let it simmer for another 20 minutes.
- Remove it from the heat and allow it to sit for a few minutes, covered.
- Serve garnished with extra shrimp and the sliced hard boiled eggs.
