Vanillekipferl (Austrian Vanilla Croissants)
- 7/8 cup softened butter
- 2/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 15/16 cup ground walnuts
- 2 1/4 cups flour
- orange zest to taste
- granulated sugar More powdered and, for coating
- Preheat oven to 170 degrees Celsius.
- With an electric mixer, in medium bowl, beat butter, sugar, vanilla extract, and granulated sugar.
- Add ground walnuts, flour and orange zest.
- Beat until smooth.
- Wrap in a plastic wrap and refrigerate for 2 hours.
- Divide the dough into small balls and roll them into 2.5 cm cylinders to form small croissants.
- Arrange them on a baking sheet lined with parchment paper.
- Bake for 15 minutes.
- Once out of the oven, carefully roll them on a mixture of icing sugar and granulated sugar.
