Ham And Fresh Vegetable Medley
- 1 lb. fully cooked ham slice, cut in 1/4-inch strips
- 1 small green pepper, cut into 1/2-inch strips
- 1 small red pepper
- 1 medium onion, cut into 1/2-inch strips
- 2 medium zucchini (1 lb.), cut into 1/2-inch strips
- 3 Tbsp. salad oil
- 1 medium yellow squash, cut into 1/2-inch slices
- 1/2 c. water
- 1 envelope chicken bouillon
- 2 tsp. basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 large tomatoes, cut into 8 wedges
- In 12-inch skillet over high heat, cook peppers, onion, squash and ham in hot salad oil about 5 minutes, stirring frequently. Reduce heat to medium; add water, bouillon, basil, salt and pepper.
- Cook until vegetables are tender-crisp, stirring occasionally, about 5 minutes.
- Add tomato wedges; continue cooking until tomatoes are heated through.
- Makes 4 main dish servings.
