Chicken Chilli - Quick And Easy Recipe

  1. Wash and cut chicken breasts into thin strips
  2. To the chicken add Black pepper, a few drops of lemon juice and salt and set aside for a few minutes.
  3. In the meantime, prepare the peppers, onions, garlic, ginger and spring onions. Cut Peppers, onions and garlic into thin strips and dice the spring onions - keep the green and white part separate.
  4. Heat Oil in a pan and fry the chicken strips until golden brown. Once it has cooked, remove into a bowl.
  5. Strain out half of the oil in the pan and in the other half of the oil, add in onions, white part of spring onions and saute.
  6. Add the garlic and once the onions have softened and saute for a few minutes
  7. Add in the peppers along with chilli flakes, sambal sauce and soy sauce,- adjust according to taste
  8. Once the peppers have softened, add half a lime/lemon and salt to taste and cook for another minute
  9. Add the green stalks of the scallions and half of the chopped corriander, mix in well and remove off the heat.
  10. Transfer into a serving bowl, garnish with the remaining corriander and serve hot either with Tortillas or rice.
