Chicken Chilli - Quick And Easy Recipe
- 2 chicken breast Cut into thin strips
- 1 pod garlic diced/halved
- 1 piece ginger grated
- 1 onion sliced
- 2 spring onions cut finely
- 2 peppers different colours
- oil for frying
- garlic sauce Sambal, chilli
- soy sauce
- 1/2 lemon /lime
- coriander chopped
- salt to taste
- black pepper
- chilli flakes
- Wash and cut chicken breasts into thin strips
- To the chicken add Black pepper, a few drops of lemon juice and salt and set aside for a few minutes.
- In the meantime, prepare the peppers, onions, garlic, ginger and spring onions. Cut Peppers, onions and garlic into thin strips and dice the spring onions - keep the green and white part separate.
- Heat Oil in a pan and fry the chicken strips until golden brown. Once it has cooked, remove into a bowl.
- Strain out half of the oil in the pan and in the other half of the oil, add in onions, white part of spring onions and saute.
- Add the garlic and once the onions have softened and saute for a few minutes
- Add in the peppers along with chilli flakes, sambal sauce and soy sauce,- adjust according to taste
- Once the peppers have softened, add half a lime/lemon and salt to taste and cook for another minute
- Add the green stalks of the scallions and half of the chopped corriander, mix in well and remove off the heat.
- Transfer into a serving bowl, garnish with the remaining corriander and serve hot either with Tortillas or rice.
