Earthy Coleslaw

  1. Using a food processor shred the cabbage and carrots and set aside.
  2. Again, using the food processor shred the onion and garlic and place in a small bowl for the dressing. Finely chop the mint and add to the onion garlic mix. Whisk in lemon zest, lemon juice, vinegar, milk, mayo, salt and pepper. Whisk until all ingredients are well combined and creamy. Pour over the cabbage and carrots and mix well.
