Oatmeal Cookies, Coconut And Blueberries
- 4 3/8 ounces spelt flour
- 1 1/4 cups coconut
- 1 1/4 cups dried blueberries
- 1 pinch salt or Bonsalt
- 5/8 cup oat flakes
- 7 tablespoons butter
- 4 tablespoons honey
- 1/2 teaspoon baking soda
- 2 tablespoons boiling water
- Prepare two baking trays, grease and line them with parchment paper. Preheat the oven to 180 degrees Celsius.
- In a bowl, mix the flour with the coconut, the salt, the oats and the dried blueberries.
- In a saucepan add the butter and the honey and heat until butter is melted, stirring occasionally.
- Add baking soda to the water and add to the dry ingredients along with the melted butter and honey mixture. Mix well until the ingredients are well combined.
- Form dumplings with your hands (the size of a walnut), put them on the trays and flatten each one with a fork or with your hand.
- Bake until they're cooked and golden brown which should take about 15 minutes.
- Allow to cool before storing in a cookie jar.
