Cacao Nib Oatmeal Cookies
- 2 tablespoons linseeds Milled
- 6 tablespoons water
- 1 1/2 cups oatmeal we recomend the Alara Scottish Oats range!
- 1 teaspoon ground cinnamon
- 1 banana
- 5 1/8 tablespoons syrup Coconut Nectar
- 1/2 cup almond milk
- 3 tablespoons cacao nibs we recomend Of The Earth range
- 1 pinch Himalayan salt
- Preheat the oven to 180 u0b0 C and line a baking sheet with parchment paper
- Mix the milled linseeds with the water and set aside
- Mash the banana with a fork then combine with coconut nectar syrup and the almond milk
- To the banana mixture add the oatmeal, oats, cinnamon and the linseed mixture. Mix until a cookie dough texture has formed
- Gently fold the chocolate chips into your cookie dough
- Scoop the dough onto the baking sheet and flatten the top with the back of your spoon
- Bake the cookies for 25-30 minutes until they become golden brown but remain fudgy
