Classic Jacket Potato With Tuna, Corn, Mayonnaise And Scallions Recipe

  1. Preheat your oven for 220 C celsius.nnRemember to wash your potato very very well. Even scrub it to be sure there is not dirt left on.
  2. Prick you potato with a fork few times (it will speed up the baking time of the potato and save you both time and money - also it will insure that you potato will not burst).
  3. Coat your potato with a little bit of oil and season with salt and pepper.
  4. Place the potato on a baking tray and bake in the oven. After 20 minutes lower your temperature to 190 C celsius and bake for and additional hour.nnNow it is time to prepare your tuna filling.npen your can of tuna and drain the liquid. Put your tuna in a deep plate or a small bowl and add 4 tablespoons of mayonnaise and a half a can of a small can of sweet corn. Stir well and refrigerate until your jacket potatoes are ready.
  5. After an hour of the potato baking in the oven the skin of the potato should have a nice crisp and golden colour and the potato should be perfectly cooked inside.
  6. Make al rage cross in your potato and add a teaspoon of butter in your potato end leave it for a minute to melt. When your butter is melter ruffle the inside up with a fork so it is easier to eat and so the taste of the butter blends with the mashed potato. Add your tuna salad topping and decorate with finely hacked scallions (I love them so I add a lot).
  7. Enjoy.
