Meatballs With Curry Couscous
- 2/3 pound ground pork
- 7 ounces ground chicken
- 1 garlic clove
- 1 chile pepper
- 4 7/16 tablespoons breadcrumbs soaked in milk
- 1 egg
- salt
- pepper
- flour
- extra-virgin olive oil
- 1 3/4 cups couscous
- 1 carrot
- 4 asparagus stalks
- 1 onion small
- 1 teaspoon curry powder
- 1 1/4 cups beef broth
- extra-virgin olive oil
- chopped parsley optional
- For the meatballs, in a large mixing bowl, mix ground meat and bread crumbs, egg, chopped garlic, ground chili powder, salt and pepper.
- Shape into small meatballs.
- Lightly coat meatballs in flour and fry over medium-low heat until golden and cooked through.
- For the couscous, cut the carrot, onion and asparagus into cubes.
- Heat oil in a pan and saute vegetables.
- Season to taste with a pinch of salt.
- Add broth and a teaspoon of curry to pan and bring to a boil.
- Place couscous in a large bowl and pour broth over couscous.
- Cover and let stand for about 5 minutes, until liquid is absorbed.
- Drizzle with oil and stir couscous with a fork.
- To serve, arrange couscous and meatballs on a plate.
- If desired, garnish with chopped parsley.
