Fish Rice

  1. Heat a large saucepan with olive oil, add the onion and garlic, and cook until onion is translucent.
  2. Add the chopped tomatoes, and tomato paste, and cook until boiling.
  3. Add hake medallions with two cups of water, season with salt, and cook on on medium heat.
  4. Once the fish is cooked, remove it with a skimmer, and place on a platter.
  5. Add the rice to the boiling water. Adjust the seasoning, and bring to a boil. Once boiling, lower heat and cover.
  6. Meanwhile, remove skin and bones from the fish, and break it up into medium-sized pieces.
  7. When the rice is almost cooked, add the fish, mix, and serve immediately.
  8. Sprinkle with chopped coriander.
