Fish Rice
- olive oil to taste
- 1 onion medium, chopped
- 3 garlic cloves chopped
- 1 tomato ripe, chopped
- 2 tablespoons tomato paste
- 4 hake medallions
- salt to taste
- rice for 4 people
- coriander sprigs
- Heat a large saucepan with olive oil, add the onion and garlic, and cook until onion is translucent.
- Add the chopped tomatoes, and tomato paste, and cook until boiling.
- Add hake medallions with two cups of water, season with salt, and cook on on medium heat.
- Once the fish is cooked, remove it with a skimmer, and place on a platter.
- Add the rice to the boiling water. Adjust the seasoning, and bring to a boil. Once boiling, lower heat and cover.
- Meanwhile, remove skin and bones from the fish, and break it up into medium-sized pieces.
- When the rice is almost cooked, add the fish, mix, and serve immediately.
- Sprinkle with chopped coriander.
