Ileen'S Chicken And Wild Rice Soup
- 1/3 c. uncooked wild rice
- 2 c. water
- 1/2 c. diced celery
- 1/4 c. diced onion
- 1 small carrot, shredded
- 6 Tbsp. butter or margarine
- 1/2 c. flour
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 tsp. Nature's Seasons
- 1/2 c. chopped green pepper
- 1/4 c. sliced fresh mushrooms
- 4 c. chicken broth
- 1 c. cooked chicken, cut up
- 1 c. half and half
- Wash rice with cold water; drain and cook in 2 cups water until tender (45 minutes).
- Saute celery, onion, green pepper, mushrooms and carrot in butter until tender.
- Add 1/2 cup flour and cook and stir 1 minute.
- Add broth and chicken.
- Bring to a boil and add rice, salt, pepper and Nature's Seasons.
- To serve, heat soup mix and stir in 1 cup half and half.
- Serve hot.
