California Sweet Potato Bake

  1. Cook potatoes in boiling salted water until tender.
  2. Drain, peel and halve lengthwise (or use 1 pound 2 ounce can).
  3. Arrange in shallow dish.
  4. Sprinkle lightly with salt.
  5. Mix the sugar, cornstarch and 1/4 teaspoon salt in small saucepan.
  6. Blend in the orange juice.
  7. Add raisins.
  8. Stir while bringing quickly to boiling. Add remaining ingredients and pour over potatoes.
  9. Bake, uncovered, at 350u0b0 for 20 minutes, or until potatoes are well glazed.
  10. Serves 4.
