California Sweet Potato Bake
- 4 medium sweet potatoes
- 1/2 ??? brown sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 c. orange juice
- 1/4 c. seedless raisins
- 1/4 c. butter
- 3 Tbsp. cooking sherry
- 2 Tbsp. chopped walnuts
- 1/2 tsp. orange peel, grated
- Cook potatoes in boiling salted water until tender.
- Drain, peel and halve lengthwise (or use 1 pound 2 ounce can).
- Arrange in shallow dish.
- Sprinkle lightly with salt.
- Mix the sugar, cornstarch and 1/4 teaspoon salt in small saucepan.
- Blend in the orange juice.
- Add raisins.
- Stir while bringing quickly to boiling. Add remaining ingredients and pour over potatoes.
- Bake, uncovered, at 350u0b0 for 20 minutes, or until potatoes are well glazed.
- Serves 4.
