Honey And Assorted Nut Cake
- 1 cup nuts assorted, walnuts, hazelnuts, and almonds, or preferred nuts, coarsely chopped
- 1/2 cup olive oil
- 1/2 cup honey
- 250 grams brown sugar
- 5 eggs
- 1/2 cup port wine
- 1 tablespoon ground cinnamon
- 300 grams flour
- 1 teaspoon baking powder
- Preheat oven 180 degrees Celsius.
- Grease a square pan with margarine, and sprinkle with flour. Set aside.
- Chop the nuts, and dredge slightly in flour.
- Whisk the oil, honey, and sugar. Add the eggs one at a time, mixing well between each addition.
- Add port wine and cinnamon, mix again.
- Add the flour and baking powder, and beat until the dough is smooth.
- Add the nuts with a spoon. Stir with a spoon, from bottom to top, without beating.
- Pour the dough in the cake pan, and bake for about 40 minutes.
- Check for doneness, and remove from the oven.
- When the cake is warm/cold, cut into squares, and sprinkle with powdered sugar.
