Peppermint Hot Chocolate Affogato

  1. Combine milk, heavy cream, sugar, salt and 2 tablespoons of water in a large saucepan and set over medium heat. Add vanilla extract and bring to a boil, stirring constantly to avoid burning.
  2. Add chocolate chips and cocoa, whisking until chocolate melts, bringing back to a low boil.
  3. Remove from heat. Transfer to a blender, blend until foamy. (about 2 minutes)
  4. Scoop ice cream into a dessert dish or large coffee cup. Pour chocolate syrup generously over ice cream and serve immediately.
