Barley And Kale Soup
- 2 1/4 pounds kale washed and tough stalks removed
- 3 tablespoons oil
- 1 onion finely diced
- 2 garlic finely chopped
- 4 1/4 cups vegetable stock
- 2/3 cup pearl barley
- 2/3 cup raisins
- 1/2 cup pine nuts
- 2 teaspoons curry powder
- 2 teaspoons cumin
- sour cream for garnish
- Blanch the kale in boiling water for 4-5 mins. Drain well and let cool. Coarsely chop the kale. Heat the oil in a saucepan and saute the onion and garlic. Add the kale and saute briefly. Season well and add the stock.
- Add the pearl barley and raisins and cook on a low heat at a simmer for 20-30 minutes. Meanwhile, dry roast the pine nuts in a frying pan until golden brown. Shortly before the end of cooking add the pine nuts to the kale mixture and stir. Add the curry powder and cumin and season to taste. Serve in bowls, garnished with a dollop of sour cream.
