Bulgur With Onion And Bell Peppers
- 1 13/16 cups bulgur
- 1 red bell pepper
- 1 yellow bell pepper
- 2 onions
- extra-virgin olive oil
- white wine
- vegetable broth 1/2 lt., boiling
- salt
- chives Chopped, for the garnish
- Wash the bell peppers and cut them into small cubes.
- Slice the onions finely and place them in a wok and saute for a few minutes with some oil.
- Add the peppers and saute for a few minutes.
- Add the bulgur and toast it for a few minutes.
- Add the white wine and allow it to evaporate completely.
- Add the boiling vegetable broth, cover with the lid, and let the bulgur absorb the liquid completely, approximately 40 minutes on low heat.
- Serve with a drizzle of extra virgin olive oil and some fresh chives.
