Organic Banana Cookies
- 1/2 cup virgin coconut oil or 1 stick unsalted butter
- 1 cup brown sugar packed
- 2 eggs organic
- 2 bananas medium sized very ripe, mashed
- 1/2 cup organic milk
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- Mix the oil, brown sugar, and 2 eggs until thoroughly mixed.
- Add the bananas, milk and vanilla. Mix well.
- Sift the flours, baking soda, cinnamon and salt into the wet mix. Stir until fully incorporated.
- Chill the dough in the refrigerator for an hour or two.
- When you are ready to bake the cookies, pre-heat the oven to 375 degrees fahrenheit and line your cookie sheets with parchment paper.
- Using a small ice cream scoop or spoon, scoop the dough onto the cookie sheets leaving at least 2 inches between the cookies.
- Bake in the preheated oven for 8-10 minutes, or until the edges are starting to brown.
- If you want to make these extra delicious glaze with a chocolate glaze.
