Garlic Soup With Croutons

  1. For the croutons, heat 4 tbsp oil in a skillet and toast the cubed bread for 5 mins until golden. Set aside.
  2. Heat the remaining oil in a pot and sweat the garlic, onion and chili over low-medium heat for 5 mins. Add the sugar and bell peppers and lightly caramelize. Add the stock, cover and simmer for 20 mins. Add the tomato and croutons and cook for an additional 10 mins. Serve sprinkled with parsley.
