Graukase Velvet Soup With Garlic Croutons
- 5 tablespoons onions
- 3 1/2 tablespoons butter
- 6 3/8 tablespoons flour
- 2 1/8 cups vegetable broth
- 7/8 cup heavy cream
- 2 3/16 cups cheese
- salt
- ground black pepper
- croutons

- whipped cream
- Peel the onions, chop them, saute them with the butter for about 5 minutes, and then sprinkle with flour.
- Add the vegetable broth and cook for approximately 10 minutes.
- Add the heavy cream, and bring it briefly to a boil.
- Add the cheese, and blend the soup with an immersion blender.
- Season with salt and pepper.
- Pour the soup into soup bowls and garnish with croutons toasted in the garlic butter, a dollop of unsweetened whipped cream and chives.
