Graukase Velvet Soup With Garlic Croutons

  1. Peel the onions, chop them, saute them with the butter for about 5 minutes, and then sprinkle with flour.
  2. Add the vegetable broth and cook for approximately 10 minutes.
  3. Add the heavy cream, and bring it briefly to a boil.
  4. Add the cheese, and blend the soup with an immersion blender.
  5. Season with salt and pepper.
  6. Pour the soup into soup bowls and garnish with croutons toasted in the garlic butter, a dollop of unsweetened whipped cream and chives.
