Moist Low-Calorie Blueberry Muffins
- 1/2 cup melted butter
- nutmeg or ground cinnamon
- 1/2 cup splenda
- 2 mashed bananas small, best if overripe
- 1/2 cup dark chocolate chopped
- 1 cup blueberries mixed, and blackberries
- 1/2 cup milk
- 1/4 cup rolled oats
- 1 salt shake of
- 1 3/4 cups whole wheat flour
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup white sugar
- Heat oven to 180C, Grease 12 regular size muffin cups.
- In bowl, mix butter until creamy. Add sugar and beat until fluffy, Add eggs one at a time, beating the entire time, Beat in vanilla, baking powder and salt.
- Mix in half the flour then half the milk into the batter, then repeat.ndd flour, Mix in bananas until it is only slightly chunky, Fold in berries and chocolate.
- Spoon into muffin cups and sprinkle nutmeg or cinnamon onto each muffin.
- Bake 15-20 minutes.
