Sausage And Vegetable Casserole
- 1 tablespoon olive oil
- 6 sausage links
- 1 onion chopped
- 2 cloves garlic minced
- 1 zucchini sliced
- 1 eggplant small, sliced
- 1/2 green pepper deseeded, chopped
- 13 1/2 ounces chopped tomatoes
- 13 1/2 ounces lima beans drained, rinsed
- 3/4 cup sweet corn canned
- 2 tablespoons fresh basil leaves torn, plus extra to garnish
- 1/2 loaf bread slightly stale, torn
- 2 ounces cheddar cheese grated
- Preheat oven to 350u0b0F.
- Heat oil in a frying pan over high heat. Cook sausages for 4-5 mins, turning, until cooked through. Drain on paper towels then cut into chunks.
- Add onion and garlic to pan. Saute for 1-2 mins, until just tender. Add zucchini, eggplant and pepper. Cook, stirring, for 2-3 mins. Transfer to a large baking dish along with sausage, tomatoes, beans, corn and basil. Season. Sprinkle with breadcrumbs and cheese. Bake for 25-30 mins, until cheese is golden. Garnish with basil leaves.
