Pancit Bihon

  1. Put the bihon noodles in a large bowl and add enough water to soak all of the noodles. Keep the noodles in there for about 5-7 mins or until you prep all the ingredients. Drain afterwards - don't leave the noodles for too long or else they'll be soggy.
  2. Over medium heat, heat the oil over medium heat, Saute the garlic until golden brown. Add the onions and cook until clear.
  3. Add the protein and saute until almost cooked.
  4. Add the veggies (brussel sprouts, baby corn, carrots, etc) and cook for about a minute.
  5. Add the soy sauce, pepper, cayenne powder (and garlic powder). Stir all the ingredients to make sure the seasonings are mixed together. Add the salt and pepper to taste.
  6. Add the water (or broth) and bring to a soft boil. Add the patis before it boils. When the water starts boiling lower the stove to low-medium
  7. While the water is softly boiling, stir in the bihon noodles. Stir occasionally until the noodles absorb all the broth, then turn off the stove.
  8. Serve warm. You can squeeze in some lime or lemon for some zest.
