Spaghetti With Clam Sauce
- 1/2 stick butter
- 4 Tbsp. olive oil
- 1 c. chopped scallions
- 1/2 Tbsp. chopped parsley
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1 clove garlic
- 1 peeled tomato
- salt and pepper to taste
- 2 (7 1/2 oz.) cans chopped or minced clams
- 1 (16 oz.) pkg. spaghetti
- 8 Tbsp. Parmesan cheese
- Heat butter and olive oil, reserve 2 tablespoons of this mixture. Add scallions, saute briefly.
- Add parsley, oregano, basil, garlic, tomato, salt, pepper and clam juice drained from clams.
- Simmer briefly.
- Add clams and then keep hot.
- Boil spaghetti and drain.
- Return to pan in which it was boiled.
- Add reserved butter mixture and Parmesan.
- Toss.
- Add 1/4 sauce to spaghetti, toss again.
- Serve with more sauce on top.
