Herbed Meatballs With Fresh Tomato Sauce
- 1 pound ground beef
- 2 onions finely diced
- 1 clove garlic minced
- 1 egg
- 1/2 cup chopped parsley finely
- 1/4 cup dry breadcrumbs
- 1/4 cup milk
- 2 tablespoons tomato paste
- 1 tablespoon chili sauce
- 1 pinch ground cumin
- 1 pinch ground nutmeg
- 3 tablespoons olive oil
- 3 tomatoes ripe, chopped
- 1/4 cup dry sherry
- 1 jalapeno pepper seeded and finely chopped
- 1 pinch sugar
- In a large bowl, mix together the beef, half the onions, the garlic, egg, parsley, breadcrumbs, milk, 1 tbsp tomato paste, chili sauce, cumin, nutmeg and salt and pepper to taste. Knead with your hands until smooth. Form the mixture into 24 meatballs.
- Heat 2 tbsp oil in a large nonstick skillet over medium heat. Add the meatballs in batches and cook for 8-10 mins until browned and cooked through, turning as needed.
- Meanwhile, heat the remaining 1 tbsp oil in a medium saucepan over medium heat. Add the remaining onions and cook for 3-4 mins. Stir in the remaining 1 tbsp tomato paste and cook for 1 min. Add the tomatoes, sherry, jalapeno and sugar. Season with salt and pepper and simmer for 5-10 mins. Transfer the meatballs to a large bowl, pour over the sauce and serve.
