Brown Rice Surprise

  1. In 5-quart saucepan over medium heat in hot oil, cook onions and green peppers until tender-crisp, stirring occasionally.
  2. Add chicken and 1/4 teaspoon salt to onion mixture over high heat; cook until chicken loses its pink color, stirring frequently.
  3. Add tomatoes with their liquid, ham, parsley, hot sauce, thyme and 1 cup water.
  4. Heat to boiling.
  5. Stir in rice; reduce heat to low. Cover and simmer 55 minutes or until rice is tender.
  6. Makes 6 servings.
