Brown Rice Surprise
- 2 whole chicken breasts, skinned, boned and cut into bite sizes
- 2 Tbsp. salad oil
- 1 large pepper, cut into strips
- 4 oz. cooked ham, cut in 1 inch cubes
- 2 Tbsp. chopped parsley
- 1/2 tsp. hot pepper sauce
- 1 large onion
- 28 oz. can whole tomatoes
- 1/2 tsp. thyme
- 1 1/2 c. long grain brown rice
- In 5-quart saucepan over medium heat in hot oil, cook onions and green peppers until tender-crisp, stirring occasionally.
- Add chicken and 1/4 teaspoon salt to onion mixture over high heat; cook until chicken loses its pink color, stirring frequently.
- Add tomatoes with their liquid, ham, parsley, hot sauce, thyme and 1 cup water.
- Heat to boiling.
- Stir in rice; reduce heat to low. Cover and simmer 55 minutes or until rice is tender.
- Makes 6 servings.
