Fish And Chorizo Soup
- 3 tablespoons olive oil
- 1 onion peeled and diced
- 3 chorizo sausages sliced thickly
- 1 clove garlic peeled and finely chopped
- 2 red peppers medium, seeds removed, chopped
- 1 teaspoon spanish paprika
- 2 bay leaves
- 6 thyme sprigs fresh
- 1 tablespoon fresh oregano leaves
- 1 1/2 pounds baby potatoes unpeeled, halved
- 14 ounces tomatoes
- 6 cups chicken stock
- 2 pounds boneless cod fillets thick, cut into large chunks
- Heat the oil in a saucepan. Add the onion and cook 5 mins. Add the chorizo, garlic and peppers and cook 2-3 mins. Add the paprika, herbs and potatoes, and stir to coat in the oil. Add the tomatoes and stock. Cover and simmer 15 mins. Add the fish and cook 4 mins, until just opaque. Season and ladle into bowls to serve.
