Fijian Italian Fusion Fries
- 2 large potatoes
- 1 teaspoon basil leaves dried or fresh
- 1 teaspoon dried oregano
- salt to taste
- 1 teaspoon chilli powder ground
- 1 tablespoon olive oil
- 1 teaspoon curry powder
- Line a flat baking sheet with foil.
- Cut potatoes into wedges and place in a bowl. In a small bowl, mix the oregano, chilli, curry, basil leaves and salt together.
- Add the mix to the potatoes and mix thoroughly. Once you have finished this process add the olive oil.
- The olive oil will just glaze the potatoes just enough that it won't stick to the baking sheet.
- Lay the wedges on the cookie sheet evenly.
- Heat oven to 350 degrees F. Place the baking sheet in the middle of the oven.
- Cook for 12 minutes. Turn the potatoes over cook for another 12 minutes.
