Fijian Italian Fusion Fries

  1. Line a flat baking sheet with foil.
  2. Cut potatoes into wedges and place in a bowl. In a small bowl, mix the oregano, chilli, curry, basil leaves and salt together.
  3. Add the mix to the potatoes and mix thoroughly. Once you have finished this process add the olive oil.
  4. The olive oil will just glaze the potatoes just enough that it won't stick to the baking sheet.
  5. Lay the wedges on the cookie sheet evenly.
  6. Heat oven to 350 degrees F. Place the baking sheet in the middle of the oven.
  7. Cook for 12 minutes. Turn the potatoes over cook for another 12 minutes.
