Simple Samosas

  1. Preheat the oven to 180 degrees Celsius.
  2. Line a baking sheet with parchment paper.
  3. In a pot, add the potatoes and peas. Cover with lightly salted water and bring the the boil. Simmer 10 to 15 minutes until the potatoes are soft. Drain.
  4. In a large bowl, add the potatoes and peas. Then add in the currants, cilantro, lemon juice, cumin, chili powder (optional), chili pepper (optional), and cinnamon. Stir well and salt to taste.
  5. Cut the puff pastry into 12 centimeter diameter circles. Wet the edges of the circle with water and fill with a tablespoon of the potato mixture.
  6. Fold the circles into half moons and seal the edges by pressing them with the tines of a fork. Baste the tops with beaten egg and place the samosas on the baking sheet.
  7. Bake 15 minutes until golden and crunchy.
  8. While baking, stir together the yogurt, mint, and cumin powder to make the raita sauce.
  9. Serve the samosas with the raita sauce on the side.
