Orange Butter Coffee Cake
- 1 pkg. yeast
- 1/4 c. water water
- 1 c. sugar
- 1 tsp. salt
- 2 eggs, slightly beaten
- 1/2 c. sour cream
- 1/2 c. butter, melted
- 2 3/4 to 3 c. flour
- 1 c. coconut
- 2 Tbsp. grated orange rind
- Soften yeast in warm water, stir in 1/4 cup sugar, salt, eggs, sour cream and 6 tablespoons butter.
- Add flour to form stiff dough, beating well.
- Cover, let rise until double, about 2 hours. Combine 3/4 cup sugar, 3/4 cup coconut and orange rind.
- Knead dough about 15 times, roll half of dough to 12-inch circle.
- Brush with melted butter, sprinkle with half of coconut mixture.
- Cut in 12 wedges.
- Roll up, starting with wide end.
- Place rolls, point side down, in 3 rows in 13 x 9-inch pan.
- Top with glaze, sprinkle with 1/4 cup coconut.
- Serve warm or cold.
