Savory French Toast

  1. Lightly whisk egg, egg white, honey and milk together.
  2. Spread 1 tbsp Dijon on one side of 2 slices of bread.
  3. Sprinkle with 1/4 of the Parmesan.
  4. Top with ham and sprinkle with 1/4 of the Parmesan.
  5. Spread 1/2 of the goats cheese on each of the other two slices of bread and place goats cheese-side down.
  6. Dip each side of the sandwich carefully into the egg mixture and they both have absorbed the liquid.
  7. Preheat oven to 400u0b0F.
  8. Melt butter in a cast iron skillet large enough for the two sandwiches. Fry each one for about 5 minutes per side. Then put in the oven for about 5 minutes.
  9. Serve hot with warmed maple syrup.
