Pear & Green Matcha Tea Muffins With Almond - Pistachio Crumble
- 1/2 cup pistachios coarsely chopped
- sliced almonds
- 1/2 cup brown sugar
- 3 tablespoons coconut oil
- 1 pears cubed
- 2 cups unbleached flour
- 3 1/4 teaspoons baking powder
- 3 1/4 teaspoons matcha green tea powder
- 1/8 teaspoon salt
- 1 1/4 cups almond milk
- 1/4 cup brown sugar
- Preheat oven to 350 degrees Fahrenheit.
- Prepare the crumble: Mix pistachios with handful of almonds, 1/4 cup sugar, and 2 tablespoons coconut oil. Set aside.
- In a bowl, mix the dry ingredients: flour, 1/4 cup sugar, baking powder, matcha tea, and salt.
- Add almond milk and 1 tablespoon coconut oil to dry ingredients. Mix well.
- Add the pear cubes. Mix again.
- Using an ice cream spoon, pour the muffin mix in a previously greased muffin pan.
- Top off each muffin with a bit of pistachio crumble.
- Bake for 20 minutes. Cool on biscuit rack.
