Pear & Green Matcha Tea Muffins With Almond - Pistachio Crumble

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Prepare the crumble: Mix pistachios with handful of almonds, 1/4 cup sugar, and 2 tablespoons coconut oil. Set aside.
  3. In a bowl, mix the dry ingredients: flour, 1/4 cup sugar, baking powder, matcha tea, and salt.
  4. Add almond milk and 1 tablespoon coconut oil to dry ingredients. Mix well.
  5. Add the pear cubes. Mix again.
  6. Using an ice cream spoon, pour the muffin mix in a previously greased muffin pan.
  7. Top off each muffin with a bit of pistachio crumble.
  8. Bake for 20 minutes. Cool on biscuit rack.
