Mac&Cheese
- 2/3 pound pasta
- 12 smoked streaky bacon rashers
- 1 1/3 cups mature cheddar cheese
- 1 bunch fresh parsley
- 2 cloves garlic
- creme fraiche A dollop full fat
- Preheat an oven to 200u0b0C and cook bacon rashers for 10 minutes.
- Heat a pan of salted water to the boil. Cook the macaroni in the simmering water for 10 minutes until just cooked.
- Whilst the macaroni is cooking, grate the cheddar cheese into a bowl.
- Blitz the cooked and crispy bacon up to a crumb along with the parsley and a clove of garlic. (You can leave some of the bacon and cut it up yourself for different consistency).
- Drain the cooked pasta, return to the hot pan and stir in the grated cheese, creme fraiche and herby bacon crumb mixture.
- Spoon it all into an oven-proof dish and finish with a little more cheese. Bake for 10 minutes in the oven.
