Grilled Indonesian Style Tofu With Peanut Mango Salsa
- 1 tablespoon ground ginger
- 1 tablespoon ground coriander
- 1 1/2 teaspoons turmeric
- 1 1/2 teaspoons garlic powder
- 3 tablespoons vegetable oil - more for the grill
- 1 tablespoon sambal oelek Asian chile paste
- 1 tablespoon brown sugar
- 1 teaspoon sea salt
- 2 cakes fresh tofu
- salsa
- 2 cups mango fresh, small dice
- 1 roasted red pepper small dice
- 1/2 cup roasted peanuts coarsely chopped
- 1/2 cup sliced green onions thinly
- 3 tablespoons basil chopped
- 1 tablespoon mint chopped
- 1 tablespoon jalapeno minced
- 2 tablespoons lime juice
- Heat 2 Tbsp of the oil in a small frying pan over low heat.
- When hot, remove from heat and add ginger, coriander, turmeric and garlic powder. Mix together well.
- Mix together Sambal Oelek, brown sugar and salt.
- Add spice mixture and stir well. Mixture will be a thick paste.
- Cut tofu into 1/2 inch planks.
- Coat tofu with a smooth layer of the paste and let rest at room temperature to marinate for an hour or overnight. (Refrigerate if marinating for longer than an hour.)
- Mix together salsa ingredients including the remaining 1 Tbsp of oil.
- Prepare a counter-top or stovetop grill and oil well. Set to medium high.
- When hot, grill tofu planks until nicely grill-marked - about 4-5 minutes per side.
- Serve hot or at room temperature with salsa.
