Summer Pineapple Cake

  1. Preheat Oven 350 degrees:
  2. In a mix-master combine the butter and white sugar and mix until smooth.
  3. In a separate bowl combine the milk, eggs, vanilla, sour cream and 1/2 cup of brown sugar and beat with a fork. Add this to the mix- master and mix.
  4. In a separate bowl combine the flour, baking powder, baking soda and salt. Slowly add this to the mix-master while on low.
  5. In a small bowl combine the pineapple and 1/2 cup of brown sugar and stir.
  6. Prepare a bunt pan with butter; (don't forget to butter the middle piece of the pan) and place the prepared pineapple along the bottom.
  7. Pour the batter into the pan.
  8. Bake for 40-45 minutes or until the toothpick test comes out clean.
