Bean And Cheese Burritos
- 8 (6-inch) flour tortillas
- 1 c. chopped onion
- 2 Tbsp. water
- 1 can no-fat refried beans
- 1 (4 oz.) can diced green chilies, drained
- 1 1/4 c. (5 oz.) shredded Monterey Jack cheese
- 3 c. lettuce, shredded
- 1/2 c. salsa
- To soften tortillas, stack and wrap in foil.
- Heat in a 350u0b0 oven for 10 minutes.
- Meanwhile in a medium saucepan, cook the onion in water until tender.
- Do not drain.
- Stir in the refried beans and green chilies; cook and stir until heated through. Spoon about 1/3 cup of the bean mixture onto each tortilla. Sprinkle about 3 tablespoons of the Monterey Jack cheese on top of the bean mixture; roll up tortilla.
- Place on a foil-lined baking sheet.
- Bake loosely covered in a 350u0b0 oven for about 10 minutes or until heated through.
