Salted Chocolate Insanity Brownies
- 8 tsp. butter
- 2 cups brown sugar
- 2 ounces unsweetened chocolate, chopped
- 1/4 cup cocoa powder
- 3 eggs
- 2 tsp. vanilla extract
- 1/2 tsp. butternut extract
- 1 3/4 cup all purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt, plus a little more for top of brownies
- 1 tsp. instant espresso powder
- 3 cups mixed "chips" - chocolate chips, peanut butter chips, butterscotch chips, salted caramel chips, white chocolate chips, chocolate chunks. Go wild here! Substitute dried fruit &/or nuts for some of the chips if you want.
- In a medium saucepot, melt the butter and then add the brown sugar and unsweetened chocolate. Stir together to blend and until smooth.. Turn off heat and let cool. Doing this step first gives it time to cool while you get everything else going.
- Preheat oven to 350 degrees. Lightly grease a 9 x 13 pan.
- In a mixing bowl combine eggs, vanilla extract, butternut extract, cocoa powder, and espresso powder. Next add the cooled butter, brown sugar & chocolate mixture, stir till well blended. Slowly add in the flour, baking powder & salt. Once batter is fully combined, add in mixed chips and stir to blend.
- Spread batter mixture evenly in pan. It is ok if it doesn't quite reach all sides of the pan (mine never does), as it will spread while it bakes. Lightly sprinkle top of mixture with the extra salt you set aside earlier. I used Himalayan pink crystal salt that I'd ground up a little for this and it worked well.
- Bake for 30 -35 minutes until done and well set. Let cool completely before cutting.
