Apple Pudding Cake
- 3 c. dried apples
- 1 1/2 c. water
- 1 tsp. lemon juice
- 1 tsp. vanilla
- 1 c. flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. margarine
- 1/2 c. water
- 1 c. sugar
- 1 Tbsp. flour
- 1 1/2 tsp. cinnamon
- 1 c. boiling water
- whipped cream
- In a medium saucepan, combine apples, 1 1/2 cups water and lemon juice.
- Bring to boiling.
- Reduce heat, cover and simmer for 5 minutes.
- Remove from heat.
- Let stand 10 minutes and stir in vanilla.
- In a medium bowl, stir together 1 cup flour, 1/4 cup sugar, baking powder and salt.
- Cut in margarine with pastry blender until crumbly.
- Stir in 1/2 cup water until just combined.
