Moroccan Fish Parcels
- 4 white fish fillets firm, scored
- 1 tablespoon moroccan seasoning
- 2 large carrots cut into matchsticks
- 2 zucchini large, cut into matchsticks
- 1 red bell peppers cut into matchsticks
- 1 cup cilantro leaves fresh, chopped + sprigs, to serve
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 1 teaspoon fish sauce
- 1/4 cup lemon juice
- 3 spring onions thinly sliced on a bias, a little reserved for garnish
- lemon wedges to serve
- Preheat oven to 400u0b0F. Cut 4 - 16x12 inch sheets of parchment paper. Lightly coat 1 side of each sheet with oil. Lightly coat fish with oil then rub with seasoning. Place 1 fish fillet on each sheet of oiled parchment. Combine carrots, zucchini, pepper and cilantro leaves and distribute over top of fish. Whisk together sugar, oil, fish sauce and lemon juice and drizzle over fish and vegetables. Top with spring onions.
- Bring together long sides of paper and fold over twice, to secure. Fold in short sides to form parcels. Place on a baking tray and bake for 12 mins, or until fish is cooked. Let rest for 5 mins then open parcels and top with cilantro sprigs and remaining onions. Serve with lemon wedges.
