Double Chocolate Cookies With Ginger And Cayenne
- 1 1/2 cups all purpose flour sifted
- 1 cup cocoa powder sifted Dutch
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon cayenne pepper
- 1 cup dark chocolate shaved, 70% - or chocolate chips
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup canola oil
- 2 large eggs
- 2 1/2 tablespoons fresh ginger grated
- 3/4 tablespoon vanilla extract
- 2 teaspoons warm water
- 1/2 tablespoon sea salt pink or white
- 1 tablespoon sugar
- Preheat oven to 375u0b0F.
- Mix dry ingredients together well in a large mixing bowl.
- Whisk wet ingredients together in a separate mixing bowl.
- Mix sugar and salt together in a small bowl and set aside until required.
- Lightly grease a parchment lined baking sheet with butter.
- Mix wet and dry ingredients together well.
- Using a small ice cream scoop, scoop dough onto prepared baking sheet.
- Flatten with the palm of your hand until about 3/8" thick.
- Sprinkle with sugar and salt mixture.
- Bake for 11 minutes.
- Remove from oven and cool for 5 minutes before removing cookies to a cooling rack.
