Mock Fideo Soup With Guajillo Chili

  1. Soak the Guajillo chilies in hot water for 10 minutes.
  2. Fry the spaghetti in the oil, then add the garlic and onion. Cook until golden brown. Discard the garlic and onion.
  3. In a blender, puree the chilies and tomatoes until smooth. Strain.
  4. Add the chicken broth and tomato sauce to the spaghetti. Season with salt as needed.
  5. Cover the saucepan and lower the heat.
  6. Cook until the pasta is done.
  7. Serve using a ring mold and garnish to taste. Add cheese and cream if desired.
