Mock Fideo Soup With Guajillo Chili
- 3 guajillo chilies seeded and deveined
- 1 3/8 cups thin spaghetti cut in half
- vegetable oil
- 1 clove garlic
- 1 slice onion
- 2 tomatoes medium
- chicken broth
- cheese optional
- cream optional
- Soak the Guajillo chilies in hot water for 10 minutes.
- Fry the spaghetti in the oil, then add the garlic and onion. Cook until golden brown. Discard the garlic and onion.
- In a blender, puree the chilies and tomatoes until smooth. Strain.
- Add the chicken broth and tomato sauce to the spaghetti. Season with salt as needed.
- Cover the saucepan and lower the heat.
- Cook until the pasta is done.
- Serve using a ring mold and garnish to taste. Add cheese and cream if desired.
