Danish Buttermilk Yogurt Soup With Strawberries And Speculoos
- 3 eggs
- 1 egg yolk
- 1/2 cup sugar fine
- 1 vanilla pod
- 2 lemons
- 4 1/4 cups buttermilk or fermented milk
- 2 natural yogurts
- 1 3/8 cups strawberries
- 10 biscuits speculoos
- In a bowl beat the eggs, egg yolk, sugar and, vanilla seeds (cut the vanilla beans in half, and scrape the inside with the tip of a knife) until the mixture whitens.
- Grate the zest of one lemon, and then press the 2 lemons.
- Add zest and juice to the mixture. Gradually add the milk and yogurt, while stirring.
- Refrigerate.
- Cut the strawberries into 4 pieces, and crack the Speculoos biscuits into pieces.
- Pour the
