Danish Buttermilk Yogurt Soup With Strawberries And Speculoos

  1. In a bowl beat the eggs, egg yolk, sugar and, vanilla seeds (cut the vanilla beans in half, and scrape the inside with the tip of a knife) until the mixture whitens.
  2. Grate the zest of one lemon, and then press the 2 lemons.
  3. Add zest and juice to the mixture. Gradually add the milk and yogurt, while stirring.
  4. Refrigerate.
