Mango Chicken Stir Fry
- 500 grams chicken sliced or diced
- 1 mango large, cut into chunks
- 1/2 red capsicum sliced
- 1 carrot cut into batons
- 1/2 cup broccoli florets
- 1 brown onion finely sliced
- 1 ginger thumb sized piece of, sliced
- 1 tablespoon fish sauce
- 1 tablespoon kecap manis
- 1 teaspoon rice wine vinegar
- 1 teaspoon sambal olek
- 1 handful mint leaves
- 1 tablespoon oil
- Combine chicken, ginger, sambal olek, kecap manis and rice wine vinegar. Allow to marinate for 20 mins - 2 hours.
- Heat oil in wok over medium- high heat.
- Add chicken in batches to brown. Remove from wok and set aside in a clean bowl.
- Add vegetables (except mango) and 1/4 cup water, stirring constantly to partly cook.
- Return chicken to the pan along with mango, stirring until chicken cooked through and mango softened through the meal.
- Right before serving, stir through mint leaves torn into the wok.
- Serve over steamed rice.
