Mango Chicken Stir Fry

  1. Combine chicken, ginger, sambal olek, kecap manis and rice wine vinegar. Allow to marinate for 20 mins - 2 hours.
  2. Heat oil in wok over medium- high heat.
  3. Add chicken in batches to brown. Remove from wok and set aside in a clean bowl.
  4. Add vegetables (except mango) and 1/4 cup water, stirring constantly to partly cook.
  5. Return chicken to the pan along with mango, stirring until chicken cooked through and mango softened through the meal.
  6. Right before serving, stir through mint leaves torn into the wok.
  7. Serve over steamed rice.
