Bacon And Leek Quiche
- 1 5/8 cups flour
- 1 pinch salt
- 7 tablespoons butter
- 2 leeks diced
- 1/2 green pepper diced
- 5 1/4 ounces bacon chopped
- 1/2 onion diced
- 3 eggs
- 5/8 cup milk
- cheese such as gouda, grated
- olive oil
- Preheat the oven to 200 Celsius.
- Cut the butter into the flour and salt and add 3-4 tbsps. of cold water. Form into a ball and refrigerate for 30 minutes.
- Saute the onion, pepper, and leek in a little olive oil for 5 minutes. Add the bacon and cook for 2 minutes more.
- Roll the dough out into a circle and place into a pie plate. Crimp or pinch the edges and prick all over with a fork.
- Place the vegetable filling into the pie plate.
- Whisk the milk with the eggs, season with salt and pepper, and pour over the filling. Sprinkle with the grated cheese and bake for 45 minutes.
