Chicken Florentine
- 6 chicken breasts Frozen, salted & peppered
- basil pesto Prepared
- 1 spinach Fresh Bagged
- 6 cheese Triangles, Laughing Cow
- mozzarella Shredded Bagged
- olive oil spray
- Put pesto in a ziplock bag & coat each chicken breast by dropping them into the bag, one at a time. (Yes, I pull them out of thr freezer completely frozen!)
- Spread one cheese triangle over each piece. The original recipe calls for "Garden Vegetable" flavored cream cheese. Walmart has a "Great Value" brand, but Larry's triangles are even more economical.
- Lay chicken pieces over a bed of spinach in a 13" by 9" glass baking dish prepared with an olive oil spray.
- Top with mozzarella; I use a whole bag, but you can use less if you're calorie conscious.
- Cover with foil & bake at 350 degrees for 30 minutes. Remove the foil & cook another 15 minutes or until the cheese is browned.
