Chicken Florentine

  1. Put pesto in a ziplock bag & coat each chicken breast by dropping them into the bag, one at a time. (Yes, I pull them out of thr freezer completely frozen!)
  2. Spread one cheese triangle over each piece. The original recipe calls for "Garden Vegetable" flavored cream cheese. Walmart has a "Great Value" brand, but Larry's triangles are even more economical.
  3. Lay chicken pieces over a bed of spinach in a 13" by 9" glass baking dish prepared with an olive oil spray.
  4. Top with mozzarella; I use a whole bag, but you can use less if you're calorie conscious.
  5. Cover with foil & bake at 350 degrees for 30 minutes. Remove the foil & cook another 15 minutes or until the cheese is browned.
