Tomato Tortellini Frittata
- 12 egg whites whisked until frothy
- 1 cup cheese tortellini
- 1 cup grape tomatoes quartered
- 1/2 cup shredded Parmesan cheese
- 3 pounds chicken breasts
- 1/3 cup mayonnaise
- 1 cup plain yogurt non-fat
- 1/3 cup basil torn into small pieces
- 1/2 cup sliced almonds
- 15 ounces mandarin oranges
- 2 tablespoons juice
- 2 pie crusts Oreo
- 2 cups dark chocolate chips
- 2 3/4 cups heavy whipping cream separated
- 28 ounces sweetened condensed milk
- 12 ounces frozen limeade concentrate
- 2 limes zested
- Preheat oven to 375 degrees.
- In your KitchenAid(R) Pro Line(R) Series 7-Qt Bowl Lift Stand Mixer with whisk attachment, beat egg whites until frothy.
- Cook tortellini to al dente according to package directions.
- In a greased 12" oven safe skillet over medium heat, add grape tomatoes and cook until warmed through.
- Add cheese tortellini to skillet, insuring that tortellini and tomatoes are in a single layer.
- Pour egg whites over tortellini and tomatoes and cook until just set.
- Bake for 10-15 minutes or until set.
- Sprinkle with Parmesan cheese and allow to sit for 10 minutes before cutting into wedges and serving.
- Preheat oven to 350 degrees.
- Place chicken breasts in baking dish and cook for 30-40 minutes or until chicken is cooked through and juices run clear.
- Allow chicken to cool for 15 minutes.
- In your KitchenAid(R) Pro Line(R) Series 7-Qt Bowl Lift Stand Mixer with flat beater attachment, add chicken breasts.
- Add mayonnaise, yogurt, basil, almonds, and mandarin oranges and juice to bowl and stir gently to combine.
- Serve on croissants.
- In a microwave safe dish, add dark chocolate chips and 3/4 cup heavy whipping cream. Microwave for one minute.
- Stir until completely melted and pour into pie crusts evenly.
- In your KitchenAid(R) Pro Line(R) Series 7-Qt Bowl Lift Stand Mixer with wire whip attachment, add sweetened condensed milk, limeade concentrate, 2 cups heavy whipping cream and lime zest. Beat until soft peaks form.
- Divide filling evenly between two pie crusts.
- Refrigerate for 2-3 hours or until completely set.
