Crab And Avocado Bruschetta
- 1 avocado ripe, peeled, stone removed, flesh diced
- 1 teaspoon lemon juice
- 1 teaspoon olive oil
- 6 slices bread baguette
- 2 tablespoons white wine vinegar
- 1 teaspoon runny honey
- 1/2 red pepper deseeded and diced
- 1/2 romaine lettuce cut into strips
- 7 ounces crab meat
- 2 sprigs fresh dill 1 sprig chopped, 1 left whole
- lemon wedges for garnish
- Sprinkle the avocado with the lemon juice. Heat 1 tsp oil in a grill pan and toast the bread, turning, for 4 mins. Remove from the pan and set aside.
- In a small bowl, mix the vinegar and honey and season with salt and black pepper. Gradually whisk in 2 tbsp oil.
- In a large bowl, mix the avocado, pepper, lettuce and crab; drizzle with the dressing. Stir in the chopped dill and season with salt and black pepper. Garnish with the lemon wedges and the remaining dill and serve with the bread.
