Buffalo Cauliflower
- extra-virgin olive oil
- 1 head cauliflower 2 1/2 to 3 lb.
- 3 tablespoons avocado oil or extra-virgin olive oil
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/8 teaspoon cayenne or more to taste; optional
- 1/3 cup hot sauce use a vinegar-based sauce such as Frank's Red Hot or Tabasco
- 2 tablespoons salted butter melted
- blue cheese dressing your favorite
- celery sticks
- Preheat oven to 450u0b0F.
- Lightly coat a sheet pan with oil.
- Separate cauliflower into florets 1 1/2 to 2 inches wide, but include any smaller pieces too.
- Combine oil, nutritional yeast, and seasonings in a large bowl and stir until well combined. Add cauliflower and toss to coat evenly.
- Spread cauliflower in a single layer on prepared sheet pan.
- Bake cauliflower on middle rack of oven until well-browned in spots and tender-crisp (check with a fork), about 15 minutes. Meanwhile, proceed with recipe.
- While the cauliflower is in the oven, combine hot sauce and melted butter in large bowl; set aside.
- Check to see that cauliflower is done. Remove from oven or add time as needed.
- Add hot cauliflower to hot sauce mixture and toss to coat.
- Transfer cauliflower to a platter and serve immediately with blue cheese dressing and celery sticks.
